Using the finest ingredients sourced from Japan and France, Executive Chef Olivier Chaignon creates inimitable and exquisite harmonies of delicate tastes and textures out of innovative and highly original combinations.
Chaignon was appointed L’Osier’s Executive Chef in 2013 after a career at renowned establishments including Taillevent and Pierre Gagnaire Paris. He first came to Japan in 2005 as executive chef of Pierre Gagnaire a Tokyo. He was awarded two stars in Le Guide Michelin Tokyo 2015-2018,chosen Gault et Millau Tokyo 2017 “Chef of the Year,” and awarded three stars in Le Guide Michelin 2019 Tokyo.
2018~2020 Awarded three stars in Michelin Guide Tokyo 2019, 2020, and 2021.
2021 Awarded three stars and Green Star in Michelin Guide Tokyo 2022 and received 96.50 points in LA LISTE 2022.
